Avocado Nests

Ingredients
- 2 avocados
- 2 hard boiled eggs
- 2 cups frozen hash browns
- 4 strips bacon
- mayonnaise
- salt and pepper

Preparation

Cook hash browns according to direction.

Cut bacon slices into thin strips and bake or fry as you prefer.

Make deviled eggs; mix a bit of mayonnaise or cream cheese with egg yolks and divide equally into the egg white halves.

Cut avocados in half, remove seed and peel.

Place hash browns on a plate and sprinkle with bacon.

Place eggs into the seed cavity of avocados.

Rest avocados on the bed of hash browns and bacon.

An American Beef Burger

Ingredients
- 550gr / 1.2 lb good quality beef mince
- 1 x egg, beaten
- 2 x large garlic cloves, crushed
- I x large shallot, chopped finely
- A good pinch of salt and a nice grind of fresh black pepper
- 1 x tbsp sunflower oil
- To Serve
- 4 x burger buns, sliced in half
- 1 x small red onion sliced thinly
- 2 x tomatoes, sliced
- The leaves of 2 x little gem lettuce (or Cos / Romaine leaves)
- 2 x pickled gherkins sliced thinly, lengthwise
- tomato ketchup and yellow American mustard

Preparation

Place the meat, egg, garlic shallot, salt and pepper in a bowl and mix through with your hands. Do this until everything is as even as possible - you wouldn't want to get a mouthful of onion or garlic!

Divide the burger mix into 4 equal parts. Form each burger by rolling it into a ball in your hands and flatten a little, but keep them nice and thick.

Heat the oil in a heavy bottomed pan, when hot, place the burgers in the pan. The heat should be medium/hot.

The cooking time will depend on how thick you make your burger and how you like them cooked. I find that my burgers take about 4 to 6 minutes on each side for a burger that is about 3cm thick (just over an inch) for a medium result.

When the burgers are cooked, lift them out of the pan and set aside. Take your burger buns and place them face down in the pan, toast them in the burger flavor for a minute or two on each side.

To serve, place the little gem leaves on your bread, then the tomato, the burgers on top, lay over a couple of slices of pickle and some sliced raw onion on top.

Pita Pizzas With Sautéed Apples And Bacon

Ingredients
- 2 pitas
- 4 slices of bacon, cooked and crumbled
- 1 granny smith apple, cored and sliced
- 1/2 red onion, sliced
- 4 cloves of garlic, minced (divided)
- 3/4 cup cheddar cheese, shredded
- 1/4 cup demerara sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- of cloves
- 1 teaspoon salt
- 3/4 teaspoon crushed chili pepper flakes
- 2 tablespoons olive oil
- 1 tablespoon butter

Preparation

Preheat the oven to 400.

Place the onion and apple in a large bowl.

Add sugar, cinnamon, cloves, ginger, chili pepper flakes, salt and 2 cloves of garlic.

Toss to coat.

Melt butter and 1 tbsp olive oil in a large skillet over medium high heat.

Add apple and onion mixture and saute until the apples are tender.

About five minutes.

Remove from heat and set aside.

Brush the pitas with the rest of the olive oil and sprinkle with the remainder of the garlic.

Top pitas with apples and onions and sprinkle with cheese and bacon.

Bake in the oven for five minutes then turn the oven to broil (keeping a close eye on them) for 1-2 minutes.

Slice into quarters and serve.

Irish Soda Bread By Mommie Cooks

Ingredients
- 4 3/4 cups flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon caraway Seeds
- 3 tablespoons honey
- 1 egg
- 1 1/2 cups buttermilk
- 4 tablespoons butter

Preparation

To a bowl add together your dry ingredients; the flour, salt, and baking soda.

Mix well.

Add in the caraway seed and combine.

Now add in the honey, egg, and buttermilk. Stir it up until a dough just begins to form.

Add in the melted butter and knead dough until all ingredients are combined. Don't over knead.

Form into a ball and cut a few 1" slits at the top.

Place dough on a baking sheet and place in an oven preheated to 350F degrees for 50 minutes to an hour.

Test with a toothpick in the center to assure the loaf is cooked completely.

Vintage Project: Strawberry Sponge Pie

Ingredients
- 2 eggs, separated
- 2 tablespoons flour
- 1/2 cup milk
- 1 quart strawberries
- 3/4 cup sugar
- 1 unbaked pie shell

Preparation

Hull the berries and rinse with cold water.

In a large bowl mix the berries, sugar and flour.

Stir the evenly coat the berries.

Beat the egg yolks in a small bowl and mix with the milk.

Add the egg milk mixture to the bowl of strawberries and mix well.

Beat the egg whites in a medium bowl until stiff.

Fold the stiffly beaten egg whites into the strawberry mixture and pour into the unbaked pie shell.

Bake at 350F degrees for 45 minutes.

Vegetarian Smoked Seitan Bbq Ribs

Ingredients
- 1 cup vital wheat gluten
- 2 tablespoons nutritional yeast
- 1 tablespoon smoked paprika
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- 2 tablespoons almond butter or any other nut butter
- 1 tablespoon soy sauce
- ¾ cup of water
- 1 teaspoon worcestershire sauce
- 1 teaspoon apple cider vinegar
- snake bitten rub

Preparation

Preheat the smoker to 270 degrees F.

Combine the first 5 ingredients in a bowl.

Add the water to a measuring cup and add the almond butter, soy sauce, worcestershire sauce & apple cider vinegar.

Mix well.

Pour the liquid mixture into the dry mixture and stir to combine.

Need the dough mixture for 2 minutes and form into a ball, let rest for 5 minutes.

Roll the dough out into a rectangular shape.

With a sharp knife cut down the center and then across to create 10 equal pieces.

Place the popsicle sticks on top of each piece and fold in, then pinch to seal.

Add your favorite wood to the smoker.

Smoke the seitan ribs for 30 minutes and then turn.

Smoke another 30 minutes

During the last 10 minutes, baste the seitan ribs with barbecue sauce.

Flip after 6 minutes to baste the other side.

Remove from the smoker and serve with your favorite barbecue sauce.

Crispy Baked Green Bean Fries

Ingredients
- 1 1/2 cups almond meal
- 1 Tbsp black pepper
- 1 tsp cayenne pepper
- 3 eggs (lightly beaten)
- 1lb fresh green beans (snapped)
- 1 Tbsp garlic powder
- 1 Tbsp onion powder

Preparation

Heat oven to 425F degrees.

Prepare a cookie sheet, and then line the coated green beans onto the sheet.

Bake in the oven for 12-15 minutes, turning the beans, and then baking for another 5 minutes.

Start checking the coating after the first 12 minutes periodically to make sure that they are not burning.

Remove from the oven when they have reached a lightly crisp golden brown color.

Remove from the oven and serve immediately.

Mini Meatball & Ravioli Soup With Garlic Croutons

Ingredients
- 1 pound ground beef (85%)
- 1 bay leaf
- 1/4 cup Italian bread crumbs
- 3 tablespoons butter
- 14 ounces can diced tomatoes
- 13 ounces bag of frozen mini cheese ravioli
- 14 ounces cans chicken broth (5-6 cups)
- 1 egg, beaten
- 1 tablespoon fresh parsley, chopped
- 3 fresh parsley leaves, minced
- 9 cloves garlic, minced
- 1 green bell pepper, diced
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
- olive oil, for sauteing
- fresh grated Parmesan or Romano for serving
- teaspoon black pepper
- 3/4 teaspoon salt
- 1 roll, or thick sliced bread, cubed
- 1 teaspoon thyme
- 1 teaspoon Worcestershire sauce
- 1/4 cup finely diced yellow onion

Preparation

In a large soup pot saute the onion and bell pepper in two tablespoons olive oil until soft and tender, season with salt and pepper.

Add the garlic, saute until fragrant.

Add the parsley, Italian seasoning, thyme, chicken broth, and tomatoes.

Bring slowly up to a boil.

In the meantime make the meatballs.

Combine all the meatball ingredients in a large bowl.

Measure out two teaspoons and form into a ball.

Measure out a few to use as a guide for making the rest.

Once the soup is boiling carefully drop the meatballs into the pot using a spoon.

Bring back to a slow simmer and continue simmering for ten minutes.

Turn up the heat and carefully add the mini raviolis and the spinach.

Bring back up to a simmer and continue simmering for ten more minutes or until ravioli are cooked through. Don't cook past this, the meatballs will begin to fall apart.

In the meantime make the croutons.

To make the croutons saute two cloves garlic in one olive oil until fragrant.

Add two to three tablespoons butter, the cubed bread, and the parsley.

Cook over medium-low heat, turning to get all sides browned.

Serve topped with croutons and with plenty of Parmesan Cheese.

Savory Carrot Souffle

Ingredients
- 3 ounces melted butter
- 6 medium size carrots, peeled, cored, and cut
- 2 large eggs
- 3/4 cup flour
- 1/4 cup heavy cream
- 1 cup milk
- 1/2 teaspoon nutmeg, grated or ground
- 1 cup Parmesan Cheese, grated
- 1 teaspoon salt

Preparation

Start by cooking the carrots in salted boiling water until tender.

Once tender, drain all the water and pulse/blend the carrots with 1/2 of the milk till smooth.

Set aside.

In a small sauce pot start cooking the rest of the milk, heavy cream, flour, salt, butter, parmesan cheese, and nutmeg.

Stir till thick consistency.

Set aside to cool.

Start by preheating the oven to 350 degrees Fahrenheit.

Whisk/beat the egg whites in a bowl till stiff peaks.

Set aside.

Mix the carrot puree and white sauce (bechamel) together and add in the yolks one at a time, then fold in the stiff egg whites.

Pour mixture in pre-greased ramekins and set in a bain-marie (water bath).

Bake for 1 hour.

Maple Bacon Wrapped Andouille Bites

Ingredients
- 1 lb Andouille sausage
- 1 lb thin sliced maple flavored bacon
- 1 ½ cups dark brown sugar, packed
- 3 Tbs stone ground mustard
- 3 Tbs Sherry vinegar or any type of wine vinegar
- ¼ C real maple syrup
- 2 tsp rice wine vinegar
- 2 tsp black pepper
- black cracked pepper, parsley or chives for garnish

Preparation

Preheat the oven to 375F degrees.

Line the baking sheet with aluminum foil and top with a baking rack that has been lightly sprayed with non-stick spray.

Cut the Andouille sausage down the middle lengthwise.

Then cut each half into 1 inch pieces.

Cut the 1 lb of bacon into 3rds.

Wrap one bacon around each piece of sausage and secure with a toothpick. Set these aside while making the glaze.

In a small saucepan, combine all the other ingredients (except the garnish).

Heat over low heat and stir constantly until sugar is dissolved.

9Keep sauce warmed on the stove top. Set aside a cup of the glaze for the final glaze application.

Brush each bacon wrapped sausage with the glaze and set on the baking sheet/rack.

Bake for a total of 40 minutes, remove the pan from the oven every 15 minutes and baste with the glaze.

On removing from the oven, use a spoon and drizzle a small amount of the glaze that you set aside onto each bacon wrapped sausage bite.

Serve immediately.
