(I know they look squished… that’s a non-negotiable step to these Icelandic cinnamon rolls; you gotta squish em on down!!)

Well, dang. I’m officially converted. Iceland knows what it’s doing! Cinnamon rolls don’t need frosting!
These are delicious!
Now I’m taking the recipe and seeing how to tweak it to a better (more economical!) result.
00 flour is almost 4 times more expensive than regular flour and to be honest, I don’t think I’m noticing that much of a difference. They are super soft and fluffy but I’m pretty sure I can accomplish that with regular flour and a tangzhong.
These are FILLED with almonds, but to be honest, it needs more almond flavor so I’ll be adding more extract next time.

The wait is over! Well, almost.
These are Icelandic cinnamon rolls, made with a homemade cinnamon marzipan filling and NO FROSTING!
I cannot even fathom a cinnamon roll with no frosting but here we are!
Oh, btw, marzipan is a mixture of almond flour, powdered sugar, rose water, and almond extract. Then I mixed that into a butter, sugar, cinnamon mixture for the filling and rolled em up.
These are not supposed to touch in the pan, so they are on a large sheet pan for baking in the morning.
These were a lot more involved then I first figured so I hope they are worth it! Also, they are made with 00 flour, which I’ve only ever used for making pasta and pizza crust, so we shall see.
I can’t wait!
