Here is super easy Ranch chicken and potatoes. I had a day out with my hubby on Saturday at the USC baseball game and then dinner and knew we would be at baseball all day for out of town scrimmages, so throwing chicken and potatoes in the crockpot for 6 hours on low was too easy.

Ingredients:
Chicken
Potatoes
Ranch, dressing or seasonings

Directions:
1. Put chicken in crock pot, coat with seasoning or dressing (add a little water or chicken stock)
2.Cut potatoes, add them in and coat with seasoning or dressing.
3. Cook on low for 6 hours.

I used 4 lbs uncooked chicken, 7 red potatoes, 1 cup of ranch seasoning. (I wish I had cut the potatoes smaller).

Don’t forget to put a freezer bag or two away for a later date. You’ll be thankful you did.

Here is an easy one! There’s a 3 hour cooking option and a 6 hour option.

Ingredients:
3 lbs chicken breast/tenderloins
2C corn
1-2C black beans
1.5 C rice or 1-2 family size boil in bag for shorter version
4oz Chicken broth/stock
2C Salsa
2 tsp Cumin
3 tsp chili powder
Salt

Directions:
1. Add chicken, salsa, chicken stock, cumin, chili powder, and salt into a crockpot on Low for 2.5-3.5 hours.

2. Add in rice, corn, and black beans. Stir well. Cook another 3 hours on Low.

For quicker cooking…

1. Add chicken, salsa, chicken stock, cumin, chili powder, and salt into a crockpot on High for 3-3.5 hours.

2. Cook instant bag rice in pot. Remove bag. Cook corn and black beans for 4 minutes in pot. Drain.

3 Add rice, beans, and corn to crock pot. You can let it sit a little so it absorbs the seasoning.

Serve with cheese, sour creams, chives etc.

Tips: I had saved chicken stock from a previous cooking so I was able to throw it in and didn’t have to buy any.

Don’t forget to put a bag or two away for freezing for a quick lunch or dinner when you are strapped for time.

I always make a LOT! No matter what it is, I make as much as will fit in the pan/pot and pull some out for the freezer. With three kids and crazy sports/ work schedules, it’s great to have these frozen meals available. This is cheaper and healthier than fast food or grocery store single frozen meals.

I make varying sizes too. Some bags are single servings and some are larger. The kids can thaw them quick and throw it in the microwave.

Remember to use compostable or reusable bags. They make glass freezer containers as well, but I can’t afford those 😂

I realized I’ve been buying oatmeal balls at Costco the past couple months when I used to make them. Super easy and you can make them however you want.

Basic ingredients:

6 C oats
2 C peanut butter
1 C honey
1 C chocolate chips

I added almond slivers, chia seeds, and flax seeds

You can also add protein powder, Nutella, raisins, or anything else you want.

Instructions:

1. Mix ingredients.
2. Make balls (clumps) on parchment paper.
3. Freeze.
4. Transfer balls to reusable or compostable freezer bags (go green).

Eat them frozen or at least chilled. They fall apart at room tempertaure. They are great for breakfast, afternoon snacks, or whenever!
