Happiness in the Kitchen with Holly I am passionate about healthy cooking! I LOVE to teach others simple recipes using fresh ingredients. I also love promoting small local businesses! ☺️

To say I love to cook is an absolute understatement! My favorite thing in the whole world to do is experiment in my kitchen! My kitchen is my happy place! (Thus, the name of my page Happiness in the Kitchen). I personally eat extremely healthy & prefer to use fresh, whole ingredients as opposed to processed foods. I love to teach kids and adults how to cook healthy foods. I teach occasional adult

demonstration cooking classes & occasional kids hands-on classes. Because I am a full-time school teacher, the cooking classes are by request. So, just send me a message if you'd like to get a group of people together for a class. I also enjoy doing cooking demos for Girl Scout Troops! I specialize in cooking classes for kids/adults with food allergies! I am happy to accommodate anyone with allergies to gluten, dairy, nuts, etc. Classes for kids ages 5 and up:
$40 per child
In a small group setting in my kitchen, the kids will get to help with all the measuring, mixing, grating, pouring, etc. to make a main dish, a side dish, a drink & a dessert. Then they will get to sample all the food they make! I will do all the clean up! I will accommodate for any allergies, so LMK when you rsvp if your child has any allergies! I want this to be a FUN experience for them! Each class is 1 1/2-2 hours. Adult Class Details:
In an intimate setting, you’ll watch me prepare three recipes. You can choose if you want those to be a main dish, a side dish, an appetizer, a dessert or a beverage. I will also share tips that will help you incorporate ways to make your meals healthy, delicious and budget-friendly using simple, fresh ingredients. The classes are at my home in Urbandale (or at your choice of location) where you will sample the foods made in class. Each class lasts approximately 1 1/2 - 2 hours. $45 per class

Kids Hands-On Cooking Birthday Parties:
By appointment only. I will come to your child's birthday party & teach all the kids how to make the food for the party! We can pick out recipes that the birthday kid will love. I’ll provide aprons for them to keep, do the grocery shopping, prep work, entertaining, clean up, & all you have to do is send out the birthday invitations & take pictures of all the fun! Private Classes:

What a great option for a girls night out, guys night out, couples date night, birthday party, bridal shower, a corporate team-building event or any other occasion that fits your needs. My passion for helping others find joy in the kitchen is limitless and I am willing to work with you if you are interested in holding such an event. Let me know how I may help! About 60% of the recipes I post are ones that I found somewhere else & then I changed/substituted/tweaked it to make it even better, healthier & simpler. About 35% of the recipes I post are ones that I completely made up on my own. The other 5% of the recipes are ones that I found somewhere and didn't tweak at all and I always give credit to the person I got the recipe from. I often try about 4-6 new recipes each week. They aren't all main dish recipes, but they might be a new side dish, dessert, smoothie, snack, etc. I rarely make the same recipe twice, unless I truly love it! I love to help people get healthy, budget-friendly, delicious & simple meals to the table in 30 minutes or less, so they have more time to focus on the important things in life. I also like to give quick tips that make life easier in the kitchen. I take the food pics with my iphone 'cause it's so much quicker than grabbing my good camera & downloading it to my computer. So, the pics aren't exactly the kind you might find on a fancy blog, but I'm more about the food than the photography. :)

I have a major sweet tooth! But, the bottom line is if I am going to have dessert, I don’t want to feel guilty about it. Our bodies are more fragile than we know and since I do plan to enjoy life and eat sweets, I want them to be as nutritious as possible. I don't make dessert from a box and I don't use white sugar, brown sugar, corn syrup, aspartame or any other things our bodies do better without. (Sugar also really causes pain & inflammation in my broken sesamoid bone, but that's a whole other long story!)

I made a new recipe the other day for my book club that was so delicious I just had to share it with you! 😋

🍑🫐 Peach & Berry Cream Cheese Crumble Bars

For the crumble/crust:

1½ cups flour
1 cup old-fashioned oats**
¾ cup brown sugar
½ teaspoon baking powder
¼ teaspoon salt
¾ cup melted butter

For the cream cheese layer:

8 ounces cream cheese, softened
¼ cup sugar
1 egg
½ teaspoon vanilla

For the fruit:

1 ripe peach, peeled and diced
1 to 1½ cups frozen berries
2 tablespoons sugar
1 tablespoon flour or cornstarch
½ teaspoon cinnamon
Small squeeze of lime juice
3/4 cup chopped pecans (optional)

Instructions:

1. Preheat oven to 350°F. Line an 8x8 pan with parchment paper.
2. Make the crumble. Mix flour, oats, brown sugar, baking powder, and salt. Stir in melted butter until crumbly.
3. Make the crust. Reserve about 1 cup of the crumble mixture for the topping. Press the remaining mixture firmly into the bottom of your pan.
4. Pre-bake for 10 minutes.
5. Make the cream cheese layer. Beat together cream cheese, sugar, egg, and vanilla until smooth. Spread over the warm crust.
6. Make the fruit layer. Toss together the peach, frozen berries, sugar, flour/cornstarch, cinnamon, and lime juice. Scatter over the cream cheese layer.
7. Top with reserved crumble & chopped pecans.
8. Bake for 35–40 minutes, until the topping is golden and the center looks mostly set.
9. Cool completely. Then refrigerate for at least a couple of hours before cutting for the cleanest bars.

**I only had 2/3 cup of oats so I used 1/3 cup Rice Krispies and loved the texture.

The other day I picked up my ribbons and judges’ comments from the Iowa State Fair! 🏅 I find the judges’ feedback so helpful, and I immediately make notes in my recipes so I can tweak things for the future.

Sometimes, if I enter a recipe that doesn’t win, I take the judges’ advice, make a few adjustments, and try again the next year. I think that’s one of my favorite parts of competing—there’s always something new to learn and improve!

I feel pretty good about the number of ribbons I brought home this year, especially considering I only entered seven contests. 😊

And of course… I’m already dreaming up new ideas for next year! 🍳🧁🥧

Today was my final day at the Iowa State Fair, and what a way to wrap it up! 🎡🥈🥮

This morning felt like a 7-hour baking marathon as I made THREE different kinds of cinnamon rolls for the big cinnamon roll contest: Caramel Pecan Rolls, Strawberry Basil Rolls, and traditional cinnamon rolls. It got a little crazy keeping track of so many timers at once—rise times, proofing times, toasting pecans, making two different kinds of frosting, and homemade caramel sauce. Whew! 😅

It was SO exciting to see my Caramel Pecan Rolls go behind the blue curtain—that’s where the judges take their favorites to deliberate and decide which of the top entries earned 1st, 2nd, and 3rd place. I was thrilled when I found out they earned 2nd place in the Caramel Rolls category! 🥈$250 in prize money is fun! 🤩

There were three categories overall—Traditional, Caramel, and Non-Traditional—with 80 cinnamon roll entries total! My Caramel Pecan Rolls ended up placing 5th overall out of all 80 entries, which I’m pretty proud of! Not too shabby, especially considering some of the winners have been baking and winning competitions for decades!

And as if that wasn’t enough fun, I also won a cookbook for answering a trivia question… and when I looked through it, I found one of my own winning recipes featured inside! ☺️

What a fun final day at the Fair! I’m already thinking about new cinnamon roll ideas for next year… 👀🥐🏆

On Tuesday my Devilish Rhubarb Eggs and my Eggstraordinary Pizza both took 1st place in their categories! 🥇 Then, all four first-place winning entries went behind the blue curtain, where the judges collaborated to determine the overall 1st, 2nd and 3rd place winners out of all 36 entries.

Here’s a video from Tuesday of the judges announcing the overall winners of the egg contest. It’s a little hard to hear, but listen closely to the male judge in the middle. He explains that he actually argued with the other two judges that my deviled eggs should have received 1st place overall instead of 2nd. 🥹❤️

And my Eggstraordinary Pizza won 3rd place overall! 🥉🎉

So, out of 36 entries, TWO of mine finished in the overall top three! 🤯🥹

And hearing one of the judges say that he thought my deviled eggs deserved the top spot? That’s pretty special. ❤️

Today was my FIRST day at the Iowa State Fair, and WOW… what a way to start! 🤩🏆

I had four competitions today, and I’m thrilled to report that my deviled eggs took 1st place! 🥇 And the story behind these makes the win even more fun! I completely changed my mind—and my recipe—this morning and decided to make a rhubarb relish deviled eggs! The judges loved the uniqueness and creativity! ❤️

My Eggstraordinary Pizza also took 1st place! 🥇 🍕 It’s a pizza with an egg-and-cheese crust, and it is SO good! The judges thought it was especially innovative. 🍕🥚

And my Peach Bacon Jalapeño Egg Salad took 3rd place! 🥉 🍑🥓🌶️

Here’s where it gets really exciting… There are four different categories in the egg contest, and you can enter each one. Each category has its own judges, who choose 1st, 2nd and 3rd place. I also had the privilege of judging two contests! I judged beef jerky and keto entries, and it was so much fun to be on the other side of the table for a change. 😄

Dinner at my house often looks like this: simple, whole foods. ❤️

Tonight we’re having salmon, sweet potatoes and potato wedges—because my son prefers sweet potatoes and my husband prefers regular potatoes. 😂

Nothing too fancy, just real, nourishing food that our bodies will recognize and appreciate.

Sometimes simple really is best. 🥰🐟🍠

It’s that time of year again! 🏆🎡💙

Stay tuned for my Iowa State Fair adventures! 🎉 My fair schedule is a little more limited this year since I start school on Monday, but that hasn’t stopped me from getting in some serious cinnamon roll practice! 😋🍥

I’ve been working hard to perfect my cinnamon rolls, and I’m hoping all that practice pays off! 🤞🏼🏆

Today wrapped up my final Kids Cooking Class of 2026! ❤️🍳

This awesome group made:
🍗 Pan-Seared Chicken with Garlic Sauce

🫛 Crunchy Roasted Peas
🍫 S’mores Bars

One of my favorite moments was when one of the boys took a bite of the chicken and said it was the best thing he had ever eaten! 😊 He couldn’t wait to go home and make it for his family. Comments like that make all the planning, shopping, and teaching so worthwhile!

Thank you to all of the kids and families who joined me this summer. It was so much fun watching these young chefs grow in confidence, try new foods, and create delicious meals. ❤️👩‍🍳
