Delicious Tiropita (Greek cheese pie) one of my favorite appetizers. Enjoy!
Tiropita (Greek Cheese Pie)

Feta 10oz.
8 oz. Ricotta cheese
1/2 cup grated parmesan
1/2 cups grated mozzarella
1 Large egg
2 Tbsp. chopped fresh dill
1 Tbsp. chopped fresh mint
2 Tbsp.. Freshly squeezed lemon juice
1/2 tsp. Salt
1/2 tsp. Black pepper

1 package of phyllo dough
3/4 Cup olive oil for brushing

Pre heat oven to 375

Add all ingredients minus the phyllo dough to a large bowl and mix well, set aside
To make triangles like I did here in the video by cutting the fillo sheet in half long ways, Cover the phyllo you're not working with using a slightly damp tea cloth or towel so it doesn't dry out. With the dough you are working with start by brushing the top sheet with olive oil, add the cheese mixture to the bottom part of the fillo. Taking two or three sheets at a time, fold the fillo over the cheese, folding upwards like you're folding a flag. (See video) Place on a baking sheet lined with a silicone mat or parchment. Brush the tops with olive oil and bake for 15-20 minutes until the top is golden brown
Let cool and Enjoy!

I store these in an air tight container in the fridge. To reheat, microwave for 10-15 seconds then in a toaster oven for 5 minutes to crisp up. But i got to tell you, these are even delicious cold!

These stuffed peppers are sooo cheesy good. Enjoy!! Stuffed Peppers. @ 8 Large peppers, a mix of green and red3 Cups RiceOlive oil1 lb. ground beef1 tsp. Onion powder1 1/2 tsp. Italian seasoning1 tsp. Seasoned salt1 tsp. Black pepper2 cups Whole milk Mozzarella Cheese freshly grated1/2 Large onion diced3 cloves garlic minced2 cups Tomato sauce, I use Raos here, homemade also works great3/4 cups freshly grated Parmesan cheesePreheat the oven to 375Prepare your rice. I use a rice cooker here.Cut off the top of the peppers and clean out the inside removing any seeds. Dice up the tops of the peppers and set aside. Par boil the peppers for about 5-7 minutes or until they start to soften, dry and set asideWhile the peppers boil, dice up the onion and put them with the diced peppersHeat a large drizzle of olive oil in a large skillet and add the ground beef breaking up as it cooks.To the ground beef add the minced garlic, Onion powder, Italian seasoning, seasoned salt and pepper. Mix wellOnce browned and cooked through remove from pan, drain and set asideAdd another drizzle of olive oil to the pan and add the peppers and onions.Sprinkle with salt and pepperSaute till just softened, remove from pan and set aside.In a large bowl add the rice, ground beef, onions and peppers, 1 1/2 cups grated mozzarella, 1 1/2 cups tomato sauce and 1/2 cup parmesan cheese.Stuff the peppers with the rice mixture and top with the remaining tomato sauce and mozzarella cheese. Sprinkle with the remaining parmesanBake about 20-25 minutes till the cheese is melted and a bit browned.Enjoy!

These Cheddar Bay Sausage Bites are such a great appetizer for the up coming holiday. So much flavor! Enjoy

Cheddar Bay Sausage Bites

16 oz. Roll of Sausage, I use Jimmy Dean
8 oz. Cream cheese, softened
8 oz. Cheddar Cheese, freshly grated
1 box of Red Lobster Cheddar Bay biscuit mix
1/2 tsp. Garlic Powder
1/2 tsp. Onion powder
1/2 tsp. Pepper
Splash of milk
4 Tbsp. butter, melted
1 clove garlic, grated
1 Tbsp. parsley

Preheat oven to 400

Add all ingredients to the bowl of a stand mixer using the dough hook. Add a splash of milk.
Add 1/2 the seasoning packet from the biscuit mix. Save the other half to add to the melted butter.
Mix until all ingredients are incorporated and smooth. Try not to overmix
Using a cookie scoop form mixture into 1” balls and arrange on a greased baking tray.
Bake at 400 for 20-25 minutes or until golden and cooked through.
While the sausage balls cook, Add the other half of the seasoning mix and grated garlic to the butter. melt the butter and add the chopped parsley.
When they come out of the oven, brush the balls with the butter and enjoy!
