Who doesn't enjoy a good & sumptuous brunch? Here's my take at a fusion shakshuka!

Recipe:
3-4 eggs
1 medium tomato
1 small onion
4-5 cloves of garlic
4-6 curry leaves
2tbsp mustard seeds
1tbsp sambhar powder (alternately use curry powder)
Salt to taste
Feta to taste
In a cast iron pan or a high heat sustainable glass pan. Put in butter and sizzle mustard seeds until they crack. Add curry leaves and onions and garlic. Cook until soft. Then, add tomatoes and cook with all the spices. Once the fat seems to be separating, create space for eggs and crack them in.
Cook on low heat and partially covered until eggs are cooked.
Sprinkle feta once eggs are cooked to liking.
