Growing up, this soup was basically a punishment 😂

My mom always had so many beans growing in the garden, and she would make soups like this all summer long. My brother and I wanted nothing to do with them.

And now I go to the farmers' market, see all the fresh beans, and get WAY TOO EXCITED. I guess this is a part of growing up .

There are so many beans at the markets right now...string beans, flat beans, fresh shell beans and I feel like a lot of people look at them and don’t really know what to do with them.

This year I even planted beans in the garden with Yiayia and Pappou. Yiayia always makes and it’s honestly one of my favorite things to eat. Sometimes as a side, sometimes as the whole meal with and bread.

Then I saw these beautiful fresh shell beans at the ADEL and obviously had to get them!

I made the simplest meal out of it . Chop one big onion, some garlic and carrots first sunny 🌻 (start by sautéing everything in extra virgin olive oil to start building the flavor).

Then I threw in all the beans I had..string beans, flat beans and the fresh shell beans..added water and bay leaves and let everything cook until tender, about 20–30 minutes.

At the end, lots of fresh dill, salt, pepper and another good drizzle of extra virgin olive oil.

I was eating it today as part of my meal prep thinking… I cannot believe I’m saying this, but this might be one of the best meals I’ve made 😂

After all those years of acting like bean soup was some kind of punishment, I’m now voluntarily growing beans, buying more beans at the farmers' market and getting excited about making bean soup.

It’s August, it’s hot, tomatoes are everywhere, and some days you really don’t feel like cooking. So don’t cook...😅

Make your own .

This is one of those recipes that shows how little you need when the ingredients are really good.

Go to the farmers market, pick a few different tomatoes, grab some colorful peppers, cucumbers, garlic, extra virgin olive oil, an onion and you’re basically done.

🍅 My farmers market gazpacho

5 big tomatoes ( I like mixing different colors )
3–4 peppers (different colors)
2 cucumbers
3 cloves garlic
1 big purple onion
1½ cups of our extra virgin olive oil
Salt & pepper

Throw everything in the blender.

1.Blend
2.Taste
3.Chill

DONE ✅ IT'S THAT SIMPLE 😁

And when you serve it, a generous drizzle of extra virgin olive oil on top. Always. 🫒

Happy National Farmers Market Week! 🫒🌽🍅
If you know me, you know I’m basically a farmers market ambassador at this point. 😅

For me,a farmers market is not just a place to stroll around on a Saturday or Sunday morning. It is a place where you can get your grocery shopping done for the week.

We’re incredibly lucky to have SO MANY wonderful farmers markets where you can find almost everything you need...fresh seasonal vegetables and fruit, milk, eggs, bread, cheese, chicken, beef, extra virgin olive oil and so much more.

I love shopping this way. I love buying what’s in season, knowing where my food comes from, talking to the people who grow and make it, and then going home and cooking with it.

When you shop at a farmers market, you’re not just buying groceries. You’re supporting real farmers, makers, small businesses and families in your own community. And you’re bringing home food that is fresh, seasonal and full of flavor.

Bring your grocery list, fill your bags, go home and cook. ❤️

Eat in season. Shop local. Know your food. Support your farmers.

may be one week, but supporting your farmers should be all year round. ❤️

If there is a time to make a Greek (Horiatiki) salad, it is NOW. 🍅🫒

Tomatoes are finally here, cucumbers are everywhere, and peppers are beautiful…!

Ripe tomatoes Titusville Farm Simon Ziegler Thousand Leaf Gardens
Cucumber Halal Pastures
Green pepper Halal Pastures
Red onion Deep Roots Farm NY
Kalamata olives
A good piece of feta SOVA FARMS
Greek oregano
Sea salt
And of course, lots of extra virgin olive oil 🫒

Remember ...no lettuce.

And my favorite part might actually be what happens at the bottom of the bowl. 😂 The tomato juices, extra virgin olive oil, feta, oregano… get a good piece of bread Wave Hill Breads and don't let any of that go to waste.

This weekend, go to your farmers market, find the best tomatoes you can, grab some cucumbers and peppers, and make yourself a big bowl of horiatiki. This is what summer should taste like!

And come see us for the extra virgin olive oil! ❤️

This is what my farmers’ market haul looks like this week. 🌈🍅🥕🍆 What does yours look like?

Every color tells the story of a different season, a different farmer, and a different meal waiting to be shared. Shopping at your local farmers’ market means bringing home produce that was often harvested just hours before it reached your basket…full of flavor, nutrients, and the hard work of the people who grew it.

My favorite way to enjoy these beautiful vegetables?

Keep it simple. Roast them, grill them, or toss them into a fresh salad, and finish everything with a generous drizzle of our ow extra virgin olive oil.

Fresh ingredients don’t need much…they just need to be treated well.

Eating seasonally is about celebrating what’s growing right now, supporting local farmers, and filling your plate with the colors of nature.

So next time you’re at your local farmers’ market, challenge yourself to eat the rainbow. Your body, your taste buds, and your community will thank you.
