🔨🚐 RV Remodel Update + Prairie Cooking in the RV! 🍴
For the next couple of months, finger foods are the theme while we continue remodeling our new RV. Our new stove gets installed this Friday, and we can’t wait to start cooking again!

Right now we’re also deciding the perfect spot to install our cameras, because Prairie Cooking in the RV is about to take on a whole new life. Just wait until you see the NEW colors we’re going with inside the 5th wheel — we’re so excited about this transformation!

Until the kitchen is fully ready, it’s going to be lots of fresh salads, simple bites, and fun finger foods keeping us going.

Crockpot and patience.... while eating, we watched the movie Deliver Me From Nowhere a Bruce Springsteen movies 🎬. I was a fan of his music growing up. But I have a lot of respect for him about his views on alcohol (that shocked me a bit). It was a good movie. My husband was a fan but was luke warm about the movie.

I can’t sleep lately because my mind is FULL of remodel plans for our new-to-us 5th wheel 😅
I’ve got an Amazon list going for when we can officially start, and let me tell you… the ideas are flowing!

We’ll be starting with the bathroom first — wallpaper + fresh paint — then moving straight into the kitchen, which is the part I’m dreaming about the most. I’m already thinking through camera angles, lighting, and where on earth I’ll mount everything so I can finally start filming 🎥🤍

If all goes to plan, I’ll be filming by the end of summer… maybe even sooner 👀✨

While scrolling today, I stumbled across the cutest little baking gem and instantly fell in love. I can’t buy anything until the RV is paid off, BUT I might be able to earn enough Fetch points to snag it — and if not, I already have a savings envelope labeled “Baking Equipment” because priorities 😂

I know this page is slow, but there is a reason. 😲

BUT....

We are packing. Because we found an RV!! We have gotten a 35 ft 5th, and it's getting a remodel starting this March (just I'm time for GRILL SEASON).

Until then, it's all about the CROCKPOT.

Vacation week is almost here! 🎉
Even though there will definitely be some cheat meals, we’re still keeping things mostly healthy with our grocery haul. After being so sick this past month, it’s been nonstop crockpot soups while I focused on healing.

I’m finally feeling ready to get back to real cooking and eating again... but first… VACATION TIME.

🍞 Baking, Blessings & A Toothache I'll Never

in Willard, Utah has been hosting some amazing baking classes, and I had the pleasure (well... kind of!) of attending one last week. There were 16 of us in the class, which just shows how much people truly love learning the art of homemade, old-fashioned baking.

Our instructor was none other than ... the owner himself.... and let me tell you, he knows his craft! Unfortunately, I had such a TERRIBLE toothache that night that I most watched, prayed for the class to end. Ans dream about sourdough instead of tasting it. 😓

Even though I couldn't participate fully, I loved the atmosphere and how much knowledge was shared. I'm definitely signing up for another class soon so I can actually take notes and ask my many questions (I did get one question in about my being a RVer and the challenges of baking at a higher elevation)!

We've made a decision lately to skip taking on a new RV payment and instead invest in our future statability. In this lifestyle, you never know what's coming or who's against you? So we're focusing on smart choices in meanful experiences, like learning traditional skills. We still plan on getting our new (with bigger kitchen) RV but first working on our investment goal number first. Every month has been so exciting for us with ALL the sideline jobs and investing every dime we can make.

Here's to more classes and no more toothaches!!

🍽️ Tonight’s dinner was simple but so colorful — stuffed peppers RV-style! 🌶️

Here’s what went inside:
🟡 Yellow bell peppers
🍚 Cooked jasmine rice
🌭 Cooked sausage
🧅 Onions
⚫️ Black Beans
🍗 Brown gravy
🧀 Pepper jack cheese

I stuffed them, placed them in the crockpot on low for 4 hours, and sprinkled a little chili powder on top for that cozy kick.

As the temperatures drop outside, the RV is filled with warmth and the most amazing smell. ❤️

👉 Simple. Cozy. Delicious.
Perfect comfort meal for these colder nights!

🍲 It’s finally here… SOUP SEASON! 🥣

This winter, I’ll be cooking up a storm — experimenting with all kinds of soups and broths. Last night’s basic meatball soup was a total hit — cozy, hearty, and full of flavor. The best part? Plenty of leftovers for my husband’s lunch today (which always makes him happy 😋).

Next up, by special request — Egg Drop Soup, but with a fun twist: an Italian Spinach version! 🌿🇮🇹

So tell me… what’s your favorite soup when the weather gets chilly?

Basic Meatball Soup Recipe

Ingredients:

1 lb ground beef or turkey

1 egg

1/4 cup breadcrumbs

1 tsp garlic powder

1 tsp onion powder

Salt & pepper to taste

6 cups chicken or beef broth

2 carrots, diced

2 celery stalks, chopped

1 small onion, diced

1 cup small pasta (like ditalini or orzo)

Optional: spinach or kale for extra greens

Instructions:

In a bowl, mix ground meat, egg, breadcrumbs, and seasonings. Roll into small meatballs.

In a large pot, bring broth to a simmer. Add onion, carrot, and celery.

Drop meatballs into the simmering broth and cook for about 10–12 minutes.

Add pasta and cook until tender.

Stir in spinach or kale (if using) just before serving.

Serve hot with a side of crusty bread and enjoy the cozy goodness! 🥖✨
