Favorite Daughter 2

Favorite Daughter 2 Christian, wife, and mom to three boys. I do not like doing the dishes or folding my laundry.

I love to bake and cook when I already have a fridge full of leftovers, read books when I should be cleaning, and buy craft supplies I probably won’t use.

Tonight for dinner was Orange Chicken and rice. My boys wanted the recipe a little different from my original reel that was posted awhile ago, so here are the changes:
The chicken breast was cut into chunks then coated in kefir (that’s it, no egg). Then I mixed flour with seasoned salt, garlic powder, and paprika and tossed my kefir chicken in it. Pan fry in a little oil until golden brown. These nuggets tasted so good that the boys wanted them on the side instead of coated in the sauce.
THE SAUCE: My son wanted more orange flavor, so I doubled the marmalade.
1 cup of Orange Marmalade. 1/2 cup of honey bbq sauce. 1 TBSP soy sauce. 1/2 TBSP sesame seeds. Let it bubble in the pan until thicker.

This reel may not make much sense unless you go back and watch the original bagel recipe reel, but this was a fun, and delicious, one to make. I got a suggestion for cinnamon crunch bagels from someone at church, but then she wasn’t there, so my family and neighbors enjoyed these immensely. The cinnamon bits I got from King Arthur baking didn’t really work in my cinnamon rolls but were PERFECT in this recipe. I have an affiliation link in my bio if you are interested in those. I do get a little back if you order through my link. 10/10 ⭐️ would definitely make these again, probably not on a day we are having a yard sale though 🤦🏼‍♀️.

Definitely my new favorite mustard.

Made sourdough noodles for the first time today.
360 g Flour
100 g sourdough starter
3 eggs
1 TBSP Olive Oil
1 tsp salt
1-2 TBSP water (put in slowly until dough forms)
Mix all together and then knead for 5-10 minutes. Cover and let it sit for at least an hour. Roll out and cut noodles. Let noodles sit for 30 minutes before boiling. Do not pile on top of each other like I did 🤦🏼‍♀️ You will have to cut them back apart. Boil in salted water for 4-6 minutes depending on thickness. Enjoy!

I really don’t like when I forget to eat lunch. At least dinner was ready at 5pm. I have learned that I should probably try to cut my noodles a little more uniform.

I like to try new things when they are on sale. That way, if I don’t like it, I don’t feel like I have wasted too much money.

All three of my blueberry bushes are loaded with blueberries. We had a cold snap after they all bloomed which worried me a bit because I have had years where the blooms froze off and my bushes had to start all over. Those tears, I maybe got half of what I usually do. When these bushes put out properly, I have enough blueberries that we eat blueberry everything, the boys sit out by the road giving them away for tips, and my freezer is stocked with enough blueberries to last the entire year. By the end of the season, I am so tired of picking blueberries that I am asking the birds and chipmunks (we have two that we love to watch) to come get the rest.

Verdict: Not bad at all. I think I like it.

Moss’s Bar Cookies. I have no clue why these are called cookies. Maybe I didn’t do them exactly right. They are delicious though! I was really worried when I got to the end of the recipe and realized there was no salt in it. I don’t think I have come across a recipe with no salt before. However, these turned out great and I will be making them again this weekend since my family, who don’t really eat raisins, polished these off…
Boil for two minutes, then take off heat:
1 cup sugar
1 cup raisins
1 cup water
Add:
1 stick of butter or margarine
Add:
2 cups flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
Put on greased Jelly Roll pan
bake in the oven at 350° for 15 to 20 minutes.
Frosting:
1 1/2 cups, powdered sugar
1 Tbsp margarine or butter
2 Tbsp milk

There is so much math going on in the kitchen. I like to point out to my kids when we use math in every day life. That way they don’t say, “When will we use this?”
