Vanillaholic

Vanillaholic I have always loved vanilla! The smell, the taste, it all gives me the feels! I began making my own homemade extracts in 2018, and there is no going back!

I was always interested in vanilla. The taste, how it was made. The beans are so expensive that making my own extract seemed beyond my reach for many years. A few years ago, I stumbled across Vanilla Bean Kings. They have a co-op each month that allows me to buy vanilla beans at an affordable cost. Their business model reflects my own in that they support free trade and sustainability. Having grow

n up part of a large family in a farming community, I understand that farmers are the backbone of our food supply. Vanilla extract from the grocery store is adequate, but my extract is high-quality. I use more beans than the FDA requires; so my extract has more flavor. It does not contain water, sugar or anything artificial. I use alcohol that I wouldn't mind drinking. Not top shelf, but not bottom of the barrel either. I don't strain my vanilla extract to make it look pretty. You will see the seeds (caviar) and the oils (where all the flavor comes from) makes it thick and syrupy.

Bourbon Vanilla has nothing to do with alcohol. It's all about the curing process

Bourbon Vanilla has nothing to do with alcohol. It's all about the curing process

Bourbon Method - Curing Process

The Bourbon curing method is the traditional post-harvest process used primarily for vanilla from Madagascar and surrounding islands. It is known for producing the classic, rich vanilla flavor most people associate with high-quality vanilla beans. After harvest, the beans undergo a carefully controlled cycle of heat treatment, sweating, sun drying, and conditioning over several months. This slow transformation develops their deep aroma, dark color, and signature creamy-sweet flavor profile.

If you have been interested, this gives a very high level explanation of the curing process. If you are interested in more detailed information, I'll drop a blog in the comments.

Today, we are featuring vanilla extract made with beans from Tanzania. They have a flavor profile that is deep & creamy (like melted butter) There are brown sugar and light chocolate under tones with notes of caramel, maple & dates. I am offering 10% off and including a recipe that pairs well with the flavor profile of the extract.
