Recipe of the Week: Rustic Eggplant Caponata 🍆

A delicious way to preserve your summer harvest!

This Sicilian-inspired caponata combines eggplant, tomatoes, olives, and fresh herbs into a savory-sweet spread that's perfect for entertaining or adding flavor to everyday meals. Enjoy it on toasted bread, alongside grilled meats, or as part of a charcuterie board.

Ingredients
🍆 2 large eggplants, diced
🍆 4 cups diced tomatoes
🍆 2 celery stalks, diced
🍆 1 onion, diced
🍆 3 garlic cloves, minced
🍆 ½ cup sliced green olives
🍆 2 tbsp capers
🍆 ¾ cup white wine vinegar (5% acidity)
🍆 ¼ cup sugar
🍆 ½ cup olive oil
🍆 Salt & pepper
🍆 Fresh basil and parsley

Instructions
1. Salt the eggplant for 30 minutes, then rinse and pat dry.
2. Sauté the onion, celery, garlic, and eggplant in olive oil until tender.
3. Stir in the tomatoes, olives, capers, vinegar, sugar, salt, and pepper.
4. Simmer for 25–30 minutes until thickened, then stir in the fresh herbs.
5. Fill hot jars, leaving ½-inch headspace, and process in a boiling-water canner according to a tested canning recipe for your elevation.

Safe Canning Headspace Guide🫙

One of the easiest mistakes to make when canning is also one of the most important to get right: headspace.

Headspace is the distance between the surface of your food and the top rim of the jar. Too much or too little can affect the vacuum seal, potentially leading to seal failures, food leakage during processing, or reduced shelf life.

As a general guide:
🫙 ¼ inch - Jellies & Jams
🫙 ½ inch - Fruits, Pickles, Tomatoes & Relishes
🫙 1 inch — Low-acid vegetables, meats & pressure-canned foods

Always follow the headspace recommendation in your tested recipe, and use a bubble remover to release trapped air before checking the final level. Small details like this help ensure safe, successful canning every time.
