Peppermint Mocha Martini Truffles
Ingredients:
- 1 cup chocolate wafer cookies, finely crushed
- 1 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1/4 cup unsweetened cocoa powder
- 1/4 cup brewed coffee, cooled
- 1 teaspoon peppermint extract
- 1/2 cup dark chocolate chips
- 1 tablespoon coconut oil
- Crushed peppermint candies, for garnish
Directions:
1. Begin by preparing your workspace. Gather all the ingredients and tools you will need, including a mixing bowl, a fork or electric mixer, a baking sheet, parchment paper, and a small microwave-safe bowl.
2. In a large mixing bowl, combine the finely crushed chocolate wafer cookies, softened cream cheese, powdered sugar, unsweetened cocoa powder, brewed coffee, and peppermint extract. Use a fork or an electric mixer on low speed to blend the ingredients together until they form a smooth, cohesive mixture. Make sure there are no lumps of cream cheese remaining.
3. Once the mixture is well combined, cover the bowl with plastic wrap and refrigerate for about 30 minutes. This will help the mixture firm up, making it easier to handle when forming the truffles.
4. After chilling, remove the mixture from the refrigerator. Using your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Place each rolled truffle onto a baking sheet lined with parchment paper. Continue this process until all the mixture has been rolled into truffles.
5. In a small microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave the mixture in 30-second intervals, stirring between each interval, until the chocolate is completely melted and smooth. Be careful not to overheat the chocolate.
6. Once the chocolate is melted, take each truffle and dip it into the melted chocolate, ensuring that it is fully coated. Use a fork to lift the truffle out of the chocolate, allowing any excess chocolate to drip off before placing it back onto the parchment-lined baking sheet.
7. After all the truffles have been coated in chocolate, immediately sprinkle crushed peppermint candies on top of each truffle for garnish.
8. Once finished, place the baking sheet in the refrigerator for about 30 minutes to allow the chocolate coating to set completely.
9. After the chocolate has hardened, your Peppermint Mocha Martini Truffles are ready to serve. Store any leftovers in an airtight container in the refrigerator for up to one week. Enjoy your delicious no-bake treat!
