Christmas Lava Flow

This creamy, frozen cocktail features two distinct layers: a sweet, white coconut layer and a rich, red strawberry-cranberry layer, creating a beautiful festive presentation!

Ingredients

For the Red "Lava" Swirl:

1/2 cup Frozen Strawberries

2 oz Cranberry Juice (for red color and tartness)

1/4 oz Simple Syrup or Agave Nectar

1 oz White Rum (optional, can be omitted)

For the White "Snow" Colada Layer:

1.5 oz White Rum

1.5 oz Cream of Coconut (e.g., Coco López)

1 oz Pineapple Juice

1/2 cup Ice (or frozen pineapple chunks)

1/4 tsp Vanilla Extract (optional)

For Garnish:

Pineapple wedge

Fresh cranberries

Sprig of rosemary

Instructions
Prepare the Red Layer: In a small blender or food processor, combine the frozen strawberries, cranberry juice, simple syrup, and rum (if using). Blend until smooth but thick. Set aside.

Prepare the White Layer: Rinse the blender. Combine the white rum, cream of coconut, pineapple juice, ice (or frozen pineapple), and vanilla extract. Blend until completely smooth and thick, like a slushie.

Assemble the Drink:

Drizzle a spoonful of the red strawberry-cranberry puree down the sides of a tall chilled glass (like a hurricane glass). This creates the "lava" effect.

Slowly pour the white colada mixture into the center of the glass until it reaches the top, pushing the red layer up the sides.

Garnish: Garnish with a pineapple wedge, a few fresh cranberries, and a sprig of rosemary for that Christmas touch.

DIRTY SNOWMAN - BAILEYS ICE CREAM COCKTAIL
A sweet treat to end your holiday evening!!!

INGREDIENTS
2 scoops vanilla ice cream
1-2 oz. Baileys Irish Cream (or homemade Irish cream)
1 cup hot chocolate, prepared
Whipped cream for topping
Sprinkles for topping

INSTRUCTIONS
Add 2 scoops of vanilla ice cream to your favorite cocktail glass.

Pour Baileys over the ice cream.

Pour hot chocolate over the ice cream and Baileys.

Top with whipped cream and sprinkles.

Serve immediately with a spoon for easier sipping and enjoy

Ingredients:
- 1 cup chocolate wafer cookies, finely crushed
- 1 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1/4 cup unsweetened cocoa powder
- 1/4 cup brewed coffee, cooled
- 1 teaspoon peppermint extract
- 1/2 cup dark chocolate chips
- 1 tablespoon coconut oil
- Crushed peppermint candies, for garnish

Directions:

1. Begin by preparing your workspace. Gather all the ingredients and tools you will need, including a mixing bowl, a fork or electric mixer, a baking sheet, parchment paper, and a small microwave-safe bowl.

2. In a large mixing bowl, combine the finely crushed chocolate wafer cookies, softened cream cheese, powdered sugar, unsweetened cocoa powder, brewed coffee, and peppermint extract. Use a fork or an electric mixer on low speed to blend the ingredients together until they form a smooth, cohesive mixture. Make sure there are no lumps of cream cheese remaining.
