Nói tới miền Tây là nhớ dừa. Cây dừa cắm rễ bên bờ kênh, che mát khoảng sân, và đi thẳng vào đời sống người mình một cách tự nhiên nhất: thân làm rui xà, lá lợp mái nhà, gáo dừa múc nước, xơ dừa làm chất dinh dưỡng cho cây trồng… Nhưng chạm tới lòng người sâu nhất, vẫn là dừa trong cái bếp quê.
Người miền Nam mình mê dừa, và biết xài dừa tới mức "vắt kiệt" từng tầng hương vị:
• Nước dừa tươi: Thay nước lọc để kho cá, kho thịt. Vừa tạo vị ngọt thanh tự nhiên, vừa giúp thịt cá mềm nhừ, lên màu gián óng ả mà chẳng cần tới màu thực phẩm.
• Nước cốt dừa : Linh hồn của món chè, bánh xèo, bánh khọt, hay mấy nồi cà ri kiểu miền Tây , bún kèn . Vị béo ngậy ấy không xộc lên mũi như bơ sữa phương Tây, mà nó ngấm từ từ, đọng lại vị ngọt hậu dịu dàng.
• Cơm dừa & Củ hủ dừa: Cơm dừa nạo thắng dừa hoặc làm mứt; củ hủ dừa giòn sần sật làm món gỏi tôm thịt thì "bắt" mồi khỏi nói.
