Finally got some photos of another one of the rotating specials - this is the spicy chicken curry biang biang noodles!

There are curry noodles in many Asian cuisines, but I thought why not make curry noodles but with one of my favorite cuisines for the curry 🇮🇳

Biang biang noodles with their chewy, bouncy texture are the perfect vehicle for strong flavors and thick sauces or gravies, so this just made so much sense to me! And in the 5 years I've been making this, I know that this makes a lot of sense to many of yall who've tried it as well! 😉

We are BACK in the Heights at New Magnolia Brewing this Saturday and we're bringing a special of the day - spicy chicken curry biang biang noodles! 🌶🍜

Once mid September hits, we're going to have to take a break from pop-ups or slow down drastically as the festival season starts back up for us and it is currently looking a bit WILD 🙃

Added one more pop-up to July! We'll be back at The Cove on Hamblen next Tuesday and we'll be bringing one of our rotating specials that day for the first time at The Cove - spicy chicken curry biang biang noodles! 🌶🔥🇮🇳🇨🇳

What a swing from one week to the next, exact same location, we might have even been set up in the exact same tent spot 😮, just a different event, and whereas last week we nearly sold out for two days in a row, this week's event was actually our poorest event of the year so far, even including our popups.

After factoring in expenses for the travel to and from San Antonio, the accommodations, the vendor fee, and labor costs, the net was just about $70 😅

After all of the effort and time put into preparing all of the ingredients for the event, the time spent driving, sitting our out in the heat, sweating our booties off, for so little return - this is one of those times that just really leaves you feeling a little burnt out.

But the ups and downs are just what comes with the territory, and regardless of what happened on this day, we still had to drive right back to Houston the very next morning for our pop up at New Magnolia Brewing (which turned out amazing thanks to y'all ☺️)

Well, I just wanted to peel back the curtain a little bit for you guys and let you guys know that it's not always sunshine and rainbows doing this 😅

At least we've got sick TeaGu Café uniforms and matching aprons now 🤷‍♂️😂

At festivals when my main role is to stay pulling noodles so we don't fall behind and my team is doing the plating, everytime the sauce hits the fresh, steaming hot noods, I get a wave of that aroma and I'm thinking geez louise that smells SO good! ARGH 😩

The TeaGu Café uniforms we made during our trip to Vietnam this past winter finally arrived and now they're suddenly mean mugging in the TeaGu Café tradition post-festival photo 😂

Well, two of us forgot aprons so Vy let me use hers and I forgot to bring my shirt for the photo 🤦‍♂️

Absolute wild weekend in San Antonio, sold out on day 1 and just 3 bowls short of selling out on day 2, even with increased stock compared to what we normally bring! The weather was consistently sketchy, super gusty, on and off rainy, and gloomy, but San Antonio once again y'all showed us your enthusiasm about these kinds of events, that "we don't care what kind of weather there is" attitude and it was freakin' amazing! 🙏❤️

Last year was our first year in San Antonio and it was hot and humid as all hell but it was really cool to see some returning customers this past weekend, and to feel the appreciation for what we do, not the pump and dump, but making each noodle to order by hand, right there, it brings a smile to me, even when I'm on 3 hours of sleep 😅

Big shoutout to Angela and Vy, Angela, part of the California squad for coming to join in on Team TeaGu festivities on her Texas visit, and Vy for basically working 2 jobs, no days off, whenever she comes out to join in on the fun on festival weekends. Thank y'all ♡

Also, for anyone wondering, I re-injured my knee. We're already through the worst of it, but the beginning when I couldn't walk without crutches at all was rough, but I hate canceling on events that I've already booked and staying strong with zero cancelations in these nearly 5 years. Vy gets an extra shoutout because she definitely pulled through in helping me through those first few events fresh off the injury when I couldn't walk 🙏

Well, due to a scheduling mishap, we're going back to San Antonio tomorrow for Balcones Heights Fiesta followed by the immediate turnaround pop-up in Houston the following day! 😅

April schedule is out!

Last year was just our first time out in San Antonio where y'all showed us a lot of support, even in the hot and heavy conditions 🥵 so we're looking forward to being out there again hopefully not quite AS hot 😆

Then we'll be finishing off once again with our friends at New Magnolia Brewing! Made a scheduling error so we have a very quick turnaround from San Antonio straight into Houston the very next day but we've never canceled anything we've scheduled in the 4.5 years we've been running so I'd like to keep it that way for as long as we can! 👊

Looking forward to seeing y'all in the rest of April!
