I love my catering family. We had such a rough week but we pulled it off. Did our annual catering for and it was a true success! Apricot Bourbon Chicken, Tender Brisket, Honey Butter Glazed Tri-Color Carrots, Broccoli Kale salad dressed in a Lemon Vinaigrette and topped w/ Craisins n Sunflower Seeds, and Garlic Parsley Hasselback Potatoes. For our Vegan/Vegetarian friends a Lentil Mushroom Sheperds Pie w/ a Cauliflower Mash. Yyyuuummm.

I've been in my food feels! Made a TON of beef, chicken, and black bean, alcapurrias, empanadas, and pastelón. I'm just waiting for my garbanzos and I'll be making my vegan jackfruit and garbanzo ones. As delicious as these are I find the masa a bit too sweet and soft because of the calabasa (pumpkin) and I may have added a little too much salt but it's ok. This is my first time making them by myself and I gotta say....I'm pretty damn proud of myself!! I know my Mama is 🥰 I'm excited to attempt these again and I know EXACTLY how I want them. WWWEEEEPPPPAAAAA!!!! 💖🇵🇷💖
