It took me 33 years to write this book.

Not because I’m a slow writer.... but because I had to live through everything in it first.

Severe eczema from birth, asthma, keratoconjunctivitis [a rare eye condition that very nearly took my sight at 13]. Life-threatening allergies, decades of conventional medication that helped in the short term, and cost me something in the long.

It wasn’t until the summer of 2020, when I finally came off all medication and found myself cooking properly every single day, that the book began to take shape.

It’s a recipe book, but it’s also the most honest thing I’ve ever written. A survival guide for anyone who has spent years not feeling well. For anyone who has tried everything, for anyone who has stood at the fridge, depleted, and reached for the wrong thing.

This book is for you.

There is an Oreo cookie recipe on page 74 of my ‘health’ cookbook.

That might sound strange but stay with me on this...

These cookies aren’t a compromise. They’re not what you make when you wish you were eating the real thing. They’re made from ground almonds, 100% cacao, and a coconut cream filling, and they genuinely snap when you bite into them.

I include treat recipes in this book because I believe in balance. A way of eating that doesn’t have room for something delicious on a Friday is not a way of eating you’ll sustain for long.

I had the pleasure of getting taught how to cook fresh pasta by Antonietta from . She taught me from scratch. Everything was so delicately kneaded, cut and placed so beautifully it was a work of art! 🇮🇹

The Italian’s sure know how to fully focus and create magic. The smells and textures were incredible to handle.

HER TOP TIP:
‘get present’ aim for the feel not the recipe. The dough should feel like clay not sticky and too moist.

The allergy sufferer’s guide to camping. >>>

Rule 01: Sun-dry your sheets.
Skip the fabric softener. Hang your bedding out in direct sunshine; UV rays kill bacteria naturally, without a single chemical. Cleaner sheets, cleaner air, calmer skin.

Rule 02: Ditch the sprays.
In a small, enclosed space, conventional cleaning products have nowhere to go. Use toxin-free alternatives only; The Lab Co. is my non-negotiable. What you’re breathing in that environment is just as important as what you’re eating.

Rule 03: Prioritise airflow.
Damp and mould are serious triggers for sensitive skin and airways. Keep windows open, use vents, don’t let the air go stale. A well-ventilated space changes everything.

Rule 04: Ground yourself. Daily.
Bare feet on grass. Soil. Sand. The earth’s frequencies are genuinely restorative for the nervous system, and for a body that’s constantly working hard to protect itself, that matters. Nature isn’t the enemy; it’s the medicine.

Rule 05: Chase the gentle sun.
Early morning and late evening light, before the intensity peaks, is where you want to be. Vitamin D for immunity, mood, and nourishment. One of the most underrated tools in the allergy sufferer’s kit.

Being an allergy sufferer doesn’t mean opting out of adventure.
It means knowing how to pack for it.

Somewhere between the espresso and sunset meals with friends, Italy rearranged something in me. These aren’t just Italian habits, they’re reminders of how we’re supposed to live. 🇮🇹

01. Rest when you can’t play.
The heat stops everything here, but it’s not laziness. When the signs tell you to slow down, slow down. Your body knows what it needs. The Italians don’t fight the afternoon; they surrender to it.

02. Be affectionate. Openly.
Italians love each other with their whole heart; kisses, embraces, hands held in the street. There’s no self-consciousness in it. Just warmth, given freely. Vulnerability expressed as love. It’s one of the most beautiful things I’ve ever watched.

03. Be present with food.
Take time to source it, prepare it, and smell it before it reaches the plate. To eat every single bite with your full attention. Food here isn’t fuel, and it’s the whole point.

04. Do everything with intention.
Coffee in Italy is an art form, but it’s also a lesson. Every small thing done with care and purpose becomes something worth savouring. Connection is always at the heart of it.

05. Work matters. But it isn’t everything.
Italians work hard. They also take long lunches, real holidays, and Sunday seriously. The culture doesn’t just tolerate rest, it protects it.
