While we all love the smell of bacon cooking in the house on a weekend morning, I do NOT like the mess or the washing up.
I often bake this lovely Checkers pancetta during the week, and freeze the crispy slices for crumbling over pastas or salads.
This time I ROLLED the pancetta before baking (way you can actually fit two packets of pancetta on one baking tray).
And, the little crispy rolls take up less space in the freezer too 😉.

One tin of chunk tuna, more than doubled in volume, with over eleven healthy plant foods added in!
Perhaps next time I could add some chunky cottage cheese for extra protein …
Having half of it for lunch today, on a bed of leaves, and adding some cubed avo.
So two extra plant foods!
The dressing for the leaves is leftover lime vinaigrette (from last week’s smoked chicken and fennel salad).
Might have some sourdough crackers on the side for some carbs so I make it to supper 🤪.
The other half of the tuna salad will be Friday lunch, served in giant butter lettuce leaves that I found at Checkers: a carb-free tuna salad wrap!

I didn’t like the corn couscous very much, and this chickpea and red lentil one is just awful!
Despite preparing it like we do normal wheat couscous, with a bit of stock powder in the hot water for flavour, it is just floury and stodgy and not nice to eat.
Such a pity.

Unusual and healthy supper.
I had a bottle of Forage and Feast coriander dressing waiting to be used in my fridge.
And some of Woolies’ Asian duck strips in my freezer.
So when I spotted this bag of Asian salad mix at Checkers, a supper plan came together!
This bag of leaves is a huge 200g, so really enough to feed 4-6 people!
Our bag was lovely and fresh - bought yesterday.
I think one definitely needs to use it up within a day or two because of all the finely grated carrot included.
The duck was good: very quick to cook, no fat, plenty of sauce, medium chili.
I dressed the salad with the coriander dressing (one bottle only just covered 100g of leaves), added some leftover grilled pineapple for extra zing, and tossed some cooked duck on top.
Filling, yet healthy.
Will definitely use these asian leaves and the coriander dressing together again in future!

This made a pretty good and quick meal!
I added one cubed uptodate potato because I love potato in a curry!
I also added some curry leaves, and a good few handfuls of spinach, and a bit of hot water to loosen the sauce a little.
Other than adding some extra veg, the curry needed no taste-doctoring at all.
Really good!
Will add some fresh coriander just before eating, and offer coriander yoghurt, cubed avo, and chutneys at the table.

Lovely healthy lunch.
Wish we’d had space for their carrot cake which looked amazing.
Lots of gluten free options on the menu.
Nice coffee too.
And impossible to walk out of there without a basket full of interesting goodies from the deli 🤪.

No junk frozen beef meatballs from Checkers OMG range.
Quite hard to find … I eventually found them next to the Fry’s frozen products.
R60 for 500g.
They do taste like beef, and they do have a nice flavour, BUT, they seriously need more seasoning if you are going to eat them on their own! A major lack of herbs and salt.
I would make a lovely concentrated tomato pasta sauce and chuck them into that.
