Scientists have found an unlikely tool for dealing with plastic pollution that's made its way into our food chain. Researchers discovered that kimchi, the traditional Korean fermented dish, contains bacteria that break down microplastics with real efficiency. A team from the World Institute of Kimchi isolated specific strains of lactic acid bacteria that target synthetic materials. In lab tests, these microbes attached themselves to the surface of microplastics and secreted enzymes that physically break down the plastic polymer. The study focused on polyethylene and polystyrene, plastics commonly found in food packaging that eventually end up in the human digestive system.

The striking part of this research is how fast and thoroughly these bacteria neutralize plastic contaminants. Certain strains reduced microplastic presence by up to 87 percent within a set period, breaking down the chemical bonds of the pollutants. The process works through:

* Enzymatic degradation, which converts plastic into smaller, less harmful molecules.
