Queen’s Cakes (A South African classic) 🧁
A nostalgic classic made even softer with a little twist.
Ingredients
• 2 eggs
• ⅓ cup tangy mayonnaise
• 1 tablespoon vanilla essence
• 1 cup milk
• ¾ cup melted margarine
• 1 cup icing sugar
• ¼ teaspoon salt
• 2 cups flour
• 4 teaspoons baking powder
• 1 cup desiccated coconut
Method
1. Preheat your oven to 200°C and lightly coat your baking pan or cupcake tray with cooking spray oil.
2. In a bowl, add the eggs, mayonnaise, vanilla essence, milk, and melted margarine. Whisk everything together until smooth.
3. Add the icing sugar and salt, then whisk again until well combined.
4. Gradually add the flour, one cup at a time, whisking as you go to avoid lumps.
5. Add the baking powder and mix it in thoroughly.
6. Fold in the desiccated coconut and combine everything until you have a smooth batter.
7. Scoop the batter into your prepared pan, filling each cup evenly.
8. Bake for about 6–10 minutes, or until the cakes are golden brown on the outside.
9. Remove from the oven, allow to cool slightly, and enjoy.
Yield
Makes approximately 36 queen’s cakes.
