Chicken Tortilla Kebabs 🍢✨
Crispy, juicy, and brushed with a rich tomato butter glaze. Every layer turns golden, crispy, and packed with flavor. 🤤

Chicken Filling:
• 1.25 lb (570 g) ground chicken
• 1 medium red onion, finely grated & squeezed dry
• 1 small red bell pepper, finely grated & squeezed dry
• 2 tbsp chopped parsley or cilantro
• 1 tbsp tomato paste
• 1 tbsp sour cream
• 1 tsp red chili flakes
• 1 tsp paprika
• 1 tsp Kashmiri red chili powder
• ½ tsp cumin powder
• ½ tsp coriander powder
• ½ tsp black pepper
• 1¼ tsp salt
• 2–3 garlic cloves, minced

You’ll Also Need:
• 5 large flour tortillas
• Wooden skewers

Tomato Butter Glaze:
• 2 tbsp oil
• 1 tbsp butter
• 1 garlic clove, minced
• 1½ tbsp tomato paste
• 1 tsp paprika
• ½ tsp chili flakes (optional)
• 1 tsp honey
• 1 tsp lemon juice
• Pinch of salt
• 1 tbsp chopped parsley or cilantro

Creamy Garlic Dip:
• ½ cup plain Balkan or Greek yogurt
• 2 tbsp mayonnaise
• 1 garlic clove, finely grated
• 1 tsp lemon juice
• ½ tsp salt
• Pinch black pepper
• 1 tbsp finely chopped cilantro

🥣 Method:

1. Mix all chicken filling ingredients and chill for 15–20 minutes.
2. Cut tortillas into rectangles and spread a thin layer of chicken mixture on each. Stack 4–5 layers, finishing with a tortilla on top.
3. Chill for 5–10 minutes, then cut into rectangles and insert skewers through the layers.
4. Bake at 400°F (200°C) for 15 minutes.
5. Simmer glaze ingredients together and brush generously over the kebabs.
6. Return to the oven for 12–15 minutes until golden and crispy.
7. Serve with the creamy garlic dip.

Smash Burger Tacos 🌮🍔
Better than the drive-thru 🤤

Crispy smash burger edges, melty cheese, toasted tortilla & the easiest burger sauce ever.

Ingredients:
• 500g ground beef
• 5–6 small flour tortillas
• Salt & black pepper
• Garlic powder
• Cheddar cheese slices
• Lettuce, onions & tomatoes

Sauce:
• 3 tbsp mayonnaise
• 1 tbsp ketchup
• 1 tsp hot sauce
• pinch garlic powder
• pinch salt
• diced pickles
• little mustard

Method:
Press beef onto tortillas and season well. Cook beef-side down in a lightly oiled pan until crispy. Flip, add cheese, and cook tortilla side until golden.

Top with burger sauce, lettuce, onions & tomatoes and enjoy 🤍

Made this in my favorite hybrid pan 🤍

Crispy Chicken Shawarma 🌯🔥

Used halal chicken from ✨

Ingredients:

For the Chicken:

1 lb boneless chicken thighs or breast, cut into pieces
Salt to taste
½ tsp red chili powder
1 tsp paprika or Kashmiri red chilli powder
1 tsp garlic paste or garlic powder
½ tsp black pepper
½ tsp coriander powder
½ tsp cumin powder
¼ tsp turmeric powder
2 tsp lemon juice
2 tbsp thick yogurt
1 tbsp tomato paste
2 tbsp oil

For the Garlic Sauce:

½ cup mayo
2 tbsp full-fat yogurt
1 tbsp olive oil
1 tsp lemon juice
2 cloves garlic, finely grated
Salt to taste

For the Shawarma Glaze:

¼ cup oil
1 tsp lemon juice
1 tbsp tomato paste or red pepper paste
1 tsp paprika or Kashmiri chilli powder
Pinch of salt
1½ tbsp pomegranate molasses

For the Onion Mix:

1 onion, thinly sliced
1 tsp lemon juice
Pinch of salt
1 tsp paprika or Kashmiri chilli powder
1 tsp oil
1 tbsp chopped parsley or coriander

For Assembly:

Tortilla wraps
French fries
Pickled cucumber sticks
Diced tomatoes

Method:

Marinate the chicken with all the chicken ingredients for at least 30 minutes.

Mix all sauce ingredients until smooth and creamy. Let rest for 10–15 mins.

Mix glaze ingredients until smooth.

Combine onion mix ingredients and let sit for 10–15 mins.

Cook chicken on high heat until fully cooked and slightly charred.

To assemble:
Spread garlic sauce, add chicken, fries, onion mix, tomatoes & pickles. Drizzle pomegranate molasses, wrap tightly and toast until crispy. Brush with glaze and toast again until golden & crispy 🤤

Butter chicken garlic bread 🥖✨

For the chicken:

• 1 lb chicken breast

• 1/2 tsp coriander powder
• 1/2 tsp red chilli powder
• 1 tsp Kashmiri red chilli powder or paprika
• 1/2 tsp cumin powder
• 1/4 tsp turmeric powder
• 1/2 tsp black pepper powder
• 1/2 tsp garam masala powder
• 3 tbsp full fat yogurt
• 1/2 tbsp lemon juice
• 1 tbsp oil

For the butter chicken sauce:

• 1 tbsp butter
• 1 tbsp oil
• 1 cup chopped onion
• 3 tbsp tomato paste
• 1 tbsp ginger garlic paste
• Salt to taste
• 1 tsp red chilli powder
• 1 tsp Kashmiri chilli powder or paprika
• 1/2 tsp coriander powder
• 1/4 tsp turmeric powder
• 1/2 tsp garam masala powder
• 1/2 tsp black pepper powder
• 1 cup whipping cream
• Chopped coriander or parsley

For the garlic butter:

• 1/2 cup softened butter
• 6–7 garlic cloves, minced
• 1 tbsp chopped parsley or coriander
• Pinch of salt

To assemble:

• 1 cup mozzarella cheese or mixed cheese
• 1 bread loaf

Method:

Mix all the chicken ingredients together and marinate for at least 30 minutes.

Cook the chicken in a pan until fully cooked and lightly charred. Slice into pieces and set aside.

For the sauce, heat butter and oil in the same pan. Cook onions until soft, then add ginger garlic paste and tomato paste.

Add all the spices and roast everything together for 2–3 minutes until the oil separates slightly and the tomato paste deepens in color.

Pour in the whipping cream and simmer until smooth and creamy. Finish with chopped coriander or parsley.

Mix together butter, garlic, herbs, and salt for the garlic butter.

Spread garlic butter over the bread loaf. Add butter chicken sauce, cheese, sliced chicken, and a little extra sauce on top.

Bake at 400°F for 12–15 minutes or until the cheese is melted and bubbly and the bread is crispy around the edges.

🌶️ Spicy Chilli Garlic Noodles 🍜🔥

Glossy, garlicky, smoky noodles tossed with juicy chicken and crunchy veggies… honestly better than takeout 🤤
Made these in my new hybrid pan ✨

🍗 Chicken Marinade:
• 1 chicken breast or 2 boneless thighs
• 1 tsp cornflour
• ½ tsp black pepper
• ½ tsp paprika or Kashmiri chilli
• Little salt
• Tiny splash vinegar or lemon juice
• 1 tsp oil

🍜 Noodles:
• 2 noodle packs

🌶️ Sauce:
• 2 tbsp soy sauce
• 1 tbsp red chilli sauce
• 1 tbsp ketchup
• 1 tsp hot sauce
• 1 tsp vinegar
• Tiny pinch sugar or honey

🥕 Veggies:
• Bell peppers
• Cabbage
• Carrots
• Green onions for garnish

✨ Quick Method:
Cook the marinated chicken until golden and set aside. In the same pan sauté garlic, chilli flakes and tomato paste. Add veggies and keep them slightly crunchy. Mix in the sauce, chicken and noodles, then toss everything together until glossy and coated in that spicy chilli garlic sauce 🔥🍜
