Chicken Tortilla Kebabs 🍢✨

Chicken Filling:
• 1.25 lb (570 g) ground chicken
• 1 medium red onion, finely grated & squeezed dry
• 1 small red bell pepper, finely grated & squeezed dry
• 2 tbsp chopped parsley or cilantro
• 1 tbsp tomato paste
• 1 tbsp sour cream
• 1 tsp red chili flakes
• 1 tsp paprika
• 1 tsp Kashmiri red chili powder
• ½ tsp cumin powder
• ½ tsp coriander powder
• ½ tsp black pepper
• 1¼ tsp salt
• 2–3 garlic cloves, minced
You’ll Also Need:
• 5 large flour tortillas
• Wooden skewers
Tomato Butter Glaze:
• 2 tbsp oil
• 1 tbsp butter
• 1 garlic clove, minced
• 1½ tbsp tomato paste
• 1 tsp paprika
• ½ tsp chili flakes (optional)
• 1 tsp honey
• 1 tsp lemon juice
• Pinch of salt
• 1 tbsp chopped parsley or cilantro
Creamy Garlic Dip:
• ½ cup plain Balkan or Greek yogurt
• 2 tbsp mayonnaise
• 1 garlic clove, finely grated
• 1 tsp lemon juice
• ½ tsp salt
• Pinch black pepper
• 1 tbsp finely chopped cilantro
🥣 Method:
1. Mix all chicken filling ingredients and chill for 15–20 minutes.
2. Cut tortillas into rectangles and spread a thin layer of chicken mixture on each. Stack 4–5 layers, finishing with a tortilla on top.
3. Chill for 5–10 minutes, then cut into rectangles and insert skewers through the layers.
4. Bake at 400°F (200°C) for 15 minutes.
5. Simmer glaze ingredients together and brush generously over the kebabs.
6. Return to the oven for 12–15 minutes until golden and crispy.
7. Serve with the creamy garlic dip.
