A silky baobab and coconut cream panna cotta infused with Madagascar vanilla, bringing together tropical richness and bright natural acidity.

Finished with apple balsamic gel for sharpness, and layered with tart red currants and golden physalis for bursts of freshness, sweetness, and balance.

A dessert that feels both festive and exotic creamy, vibrant, and deeply comforting.

Baobab, known as the β€œTree of Life,” is one of Africa’s most iconic ancient trees, revered for centuries for its resilience and nourishment. Its fruit is naturally rich in vitamin C and has a bright citrusy tang, long used across African cuisines and traditional medicine. brochette is made with duck breast, skin on, so it hits the hot skillet and gives you that natural fat, crisp skin, and juicy meat. I marinated it with a little lemon and dehydrated garlic, then coated it in Berbere, that bold Ethiopian red spice with a warm, slightly coarse texture that sticks beautifully to the duck.

After grilling, it’s drizzled with homemade Brazilian sauce for a sweet tangy kick, and finished with fresh chives on top. Simple, bold, and full of flavour.
