MINI BEEF STROGANOFF PIES!! Tender braised beef in a creamy mushroom stroganoff sauce, wrapped in golden puff pastry. Proper comfort food. You’ll need: 700g beef chuck or gravy beef, cut into chunks 1 onion, sliced 250g mushrooms, sliced 2 cloves garlic, minced 1 packet Seasoning Beef Stroganoff mix 1½ cups beef stock 1 tbsp Worcestershire sauce 1 tbsp Dijon mustard ½ cup sour cream 1 tbsp olive oil Black pepper Puff pastry 1 egg, for egg wash Method: Brown the beef in olive oil, then remove from the pan. Add the onion and mushrooms and cook until softened and golden, then add the garlic. Add the beef back in with the Mingle Beef Stroganoff mix, beef stock, Worcestershire and Dijon mustard. Cover and braise at 160°C fan for around 2–2½ hours, or until the beef is fall-apart tender. Stir through the sour cream and black pepper, then allow the filling to cool slightly. Cut puff pastry to fit a greased muffin tin and press into each hole. Spoon in the stroganoff filling, top with another piece of puff pastry and press the edges together to seal. Brush with egg wash and cut a small slit in the top. Bake at 200°C fan for 20–25 minutes or until puffed and golden. Use code KELN to save on your next Mingle order.
